Introduction to vegan cooking with a professional fine dining chef

Come learn vegan cooking from a professional chef who worked in Michelin star restaurants and fine dining kitchens. Take your cooking skills to the next level and learn the basics of plant-based cooking, food preparation, knife skills and plating and presentation.

This evening course will cover the following:

Bread making , cooking vegetables, curing vegetables, basic fermentation, making stocks and sauces, mousses and purées.

At the end of the course the group will sit down and enjoy an evening meal together with the food prepared in the course, all in the relaxing space of our wine bar.

Introduction to raw plant based cuisine

Let us teach you the basic skills of raw plant-based foods with a qualified raw vegan chef. In this course you will learn how to make perfect plant-based milks, smoothies, elixirs, medicinal teas(decoctions & infusions) and mushroom lattes. You will learn about soaking and sprouting, raw juicing, superfoods, raw garnishes and salad combinations, raw sauces, knife skills and plating techniques.

The class will give you the skills to implement raw principles in the kitchen at home and to live a more healthy life day to day. At the end of the class we shall all enjoy a meal together and have time for discussion.

In this introduction class to fermentation you will learn from a certified raw vegan chef how to make Kombucha and Kefir, Kimchi and Saurkraut, pickled vegetables and fruits as well as fermentation applications, flavour combinations, knife skills, equipment and presentation techniques. The course will give you the skills to develop your own fermentation kitchen at home and tips and tricks to incorporate fermented foods into your everyday routine.

At the end of the course we shall enjoy a healthy meal of fermented foods and continue the discussion of fermentations. You will receive your starter packs for Kombucha and Kefir at the end of the class to set you on your way...
